“Every morning at 5am, before Adare wakes up, we are here. Mixing dough, laminating croissants, pulling sourdough from the oven. By the time you walk through the door, the bread is still warm.”

Our eggs come from free-range hens in Ballyhoura. Our flour is stone-ground at Dunany in County Louth. Our butter is hand-churned Abernethy from Northern Ireland. We know where everything comes from because it matters.
We are not trying to be fancy. We are trying to be good. A proper cup of coffee, a warm scone with real butter, a sandwich made with bread we baked that morning. That is what we do.
